Chicken Caesar Wrap

Chicken Caesar Wrap

Ingredients

• 1 large tortilla (your choice!)

• Handful shredded kale

• Handful shredded brussels sprouts

• Handful cherry tomatoes, halved

• Grilled or roasted chicken (leftovers), 3oz per wrap

• 1/2 avocado, sliced

• Salt and pepper to taste

Hemp CaesarVinaigrette(recipe follows)

• ¼ cup hemp seeds

• 1 tablespoon Dijon

• 1 ½ teaspoons anchovy paste

• 2 cloves garlic, roughly chopped

• ½ cup fresh lemon juice

• ¾-1teaspoon fine sea salt

• 15- 20 grinds fresh black pepper

• 1 cup extra virgin olive oil

Instructions

1. In a bowl, toss the kale brussels sprouts, salt, pepper and a generous dousing of the vinaigrette until well combined.

2. Lightly warm the tortilla on your stovetop until it's soft and pliable. Once warm, lay the tortilla on a flat surface, in the bottom third of the tortilla, leaving about 2 inches at the bottom, evenly place the kale and Brussels mixture, then add chicken and avocado slices on top. Season avocado with salt and pepper.

3. Fold the left and right sides of the tortilla in, then tightly roll up the tortilla from the bottom, like a burrito.

4. Combine everything except the olive oil in a high speed blender.

5. Blend until smooth, about a minute, scraping down the sides as necessary so it blends evenly.

6. With the blender running, pour in the olive oil and blend until combined.
