Cilantro Lime Chicken Skewers

It's time to PAR-tay! You know you've hit the foodie jackpot when party food just happens to be good for you. There is nothing like watching sports games with a group of friends. But, what might be even better is a party spread that's careening with culinary goodness. When you're sitting in front of smattering of fried and ultra-processed foods, being able to reach for something that is GOOD for you, can make all the difference. These skewers deliver on both flavor and feel-good satisfaction. Cilantro Lime Chicken Skewers for the WIN! Cilantro Lime Chicken Skewers

Ingredients

• 1/2 yellow onion, quartered

• 2 cloves garlic, roughly chopped

• 1 cup tightly packed fresh cilantro, roughly chopped

• Zest of 2 limes

• 1 3/4 teaspoons salt

• 10 grinds fresh black pepper

• 4-6 tablespoons extra virgin olive oil (enough for it to blend)

• 1 1/2 pounds chicken breasts, cut into 1 inch chunks

Instructions

1. Combine all ingredients, EXCEPT the chicken in a blender.

2. Blend until smooth, scraping down the sides as necessary so it all blends evenly.

3. Place chicken in a medium bowl, pour onion mixture into the bowl and stir to combine thoroughly.

4. Cover and let marinate in the fridge for at least 2 hours, up to overnight.

5. Heat grill over medium high heat.

6. Meanwhile, skewer the chicken. Use metal skewers, but if using wood skewers, make sure to soak them for 30-60 min before skewering chicken so they don’t burn on the grill.

7. Grill 2-3 min per side, until there are nice grill marks and they’re cooked through. If they stick to the grill when you try to turn them, let them cook another minute or so - they’ll release with more ease when they’re ready to flip.

8. To serve, top with a generous squeeze of lime juice and a heaping spoonful of Roasted Poblano Pepitas Dip.

9. If serving on a party buffet, take the chicken off of the skewers and serve with toothpicks for easy access cauliflower and mushrooms.
