Grilled Cabbage with Herby Hemp Caesar Dressing

This Grilled Cabbage with Herby Hemp Caesar Dressing is a menopausal lady's best friend. We get it. Cabbage might not be your first choice when it comes to veggies. But, trust us when something magical happens when you grill cabbage. It unlocks a rich, umami flavor that's like none other. Moreover, cabbage is a super veggie. Grilled Cabbage with Herby Hemp Caesar Dressing

Ingredients

• 2- 3 chicken breasts

• Sea salt

• Extra virgin olive oil

• One (1) head cabbage (green or purple), cut into quarters from top to bottom, so the root holds each quarter together (if the cabbage is large, cut it into sixths)

• Salt and pepper

• ¼ cup fresh dill, chopped

• ¼ cup fresh Italian parsley, chopped

• ¼ cup pistachios, chopped

• ¼ cup almonds, chopped

Hemp Caesar Vinaigrette (recipe follows)

• ¼ cup hemp seeds

• 1 tablespoon Dijon

• 2 cloves garlic, roughly chopped

• ½ cup fresh lemon juice

• ¾-1teaspoon fine sea salt

• 15- 20 grinds fresh black pepper

• 1 cup extra virgin olive oil

Instructions

1. Heat a grill or griddle over medium heat.

2. Drizzle olive oil over each cabbage wedge and season with salt and pepper.

3. When the grill is hot, place each wedge onto the grill and cover loosely with foil (this will help the cabbage cook all the way through).

4. Cook until each side is deeply golden, even charred in some places, about 20-30 minutes total, depending on how big the wedges are.

5. While the cabbage cooks, stir the dill and parsley into the vinaigrette.

6. To serve, douse the wedges in the herby dressing, top each with a generous sprinkle of pistachios and almonds.

7. Combine everything except the olive oil in a high speed blender.

8. Blend until smooth, about a minute, scraping down the sides a s necessary so it blends evenly.

9. With the blender running, pour in the olive oil and blend until combined.
