Sheet Tray Shrimp, Broccoli & White Beans

We happen to be mildly obsessed with shrimp. Not only are they delicious, but they're a lean, protein packed seafood. Next up, cruciferous veggies, like broccoli, which are packed with fiber aid in gut health and digestion. Did we mention that the white beans are also loaded with fiber. If you're looking to feed a hungry family, double up on the beans to bulk up the portions with protein and sustenance. If you add more bean, remember to add a bit more paprika, salt and pepper. In less than 30 minutes, you're on your way!

Sheet Tray Shrimp, Broccoli & White Beans

Ingredients

• 1-2 bunches baby broccoli, ends trimmed

• 1 pint cherry tomatoes, halved

• 1 can white beans, rinsed and drained

• 3 large cloves garlic, thinly sliced

• 1 ½ pounds shrimp, peeled and deveined

• ½ cup extra virgin olive oil, plus more for garnish

• 2 teaspoons paprika

• ¾ teaspoon salt

• 15 grinds fresh black pepper

• Juice of 2 lemons

• Handful fresh Italian parsley, torn or very roughly chopped

• Handful fresh dill, torn or very roughly chopped

Instructions

1. Heat oven to broil.

2. Spread broccoli onto a sheet tray.

3. Scatter cherry tomatoes, beans and sliced garlic evenly onto the tray.

4. In a small bowl, combine shrimp, olive oil, paprika, salt, pepper and juice of one lemon (reserve the other lemon for garnish).

5. Scatter the shrimp evenly onto the tray and drizzle remaining oil over the broccoli, tomatoes and beans.

6. Broil on the top rack for 4-6 minutes, or until the shrimp are just cooked through and broccoli is slightly charred on the edges. If anything begins to burn, flip it over to finish cooking.

7. To serve, top with juice of remaining 1 lemon, a drizzle of olive oil and the fresh herbs.
